Yellow Tea

Yellow tea is produced from green tea by using one more process called “brazing”. Undried green tea is very lightly fermented by placing the moist green tea in a pile and allowing it to set or water is added and it is baked in a closed container until the edges of the leaves yellow (brazed). It is then fully dried to become yellow tea. The light fermentation creates a very unique color and taste. Yellow tea is a rather non-mainstream tea often used for gifts and ceremonial events.
